In commercial egg farming, eggs are typically washed as part of the processing routine. This involves scrubbing eggs with detergents and sanitizers to meet strict grocery store standards. While this process may make the eggs look pristine, it also removes their natural protective coating, called the "bloom" or "cuticle." The bloom is nature’s way of sealing the egg and protecting it from bacteria and moisture loss. Once washed, eggs must be refrigerated to prevent contamination.
At our farm, we do not wash our eggs in the conventional way. At most, we run the eggs under warm filtered water to remove debris. By leaving the bloom intact, our eggs maintain their natural freshness longer and don’t require refrigeration until they’re washed or cracked. This is a traditional and sustainable approach that respects the egg’s natural design. Unwashed eggs are better protected from spoilage and retain their superior quality for weeks when stored in a cool place.
